Honestly, my buddy at the bakery downtown told me to proof my cinnamon rolls in a cold oven with just the light on. I thought it was a weird trick, but after trying it for a week, my rolls are way more even.

Seriously, a whole week of testing for some cinnamon rolls? It's just bread with sugar, not a science project. If they taste good, who cares if they're a little lopsided. Seems like a lot of extra fuss for something you're just going to eat in five minutes.

My friend Sarah was the same way, always saying her homemade bagels tasted fine even if they were flat. Then she tried the cold oven trick with just the light on for the proof, and the difference was crazy. Her last batch had that perfect, puffy dome she only ever saw in shops. She won't shut up about it now.
