New machines are hard to use. The old way had more heart.

Yeah, "the old way had more heart" is so true. My grandpa's percolator made coffee that just felt right, you know? New gadgets don't have that same feel.

Forget about extraction charts and bloom times. That bitter, almost burnt taste is the whole point. It's the flavor of a pot left on the camp stove for an hour while everyone packs up the tent. Modern coffee misses that specific kind of punishment.
