Spent last Tuesday trying to dial in a single cup of pour-over

I went through 60 bucks worth of beans just to get one decent cup before work. My wife walked in, saw the mess of grounds and filters, and just said 'are you okay?' without waiting for an answer. Has anyone else ruined a perfectly good bag of beans chasing a recipe?

Did you ever stop to think that maybe those super expensive third wave beans are actually harder to dial in than a solid mid range bag? I noticed that once I stopped chasing the fanciest single origin stuff and just used a reliable medium roast from a local roaster, my pour overs started tasting way more consistent. All those complex natural process beans with crazy flavor notes are cool but they seem to vary wildly from batch to batch. Might save you some money and frustration to grab a $15 bag of something boring but stable instead of the $30 experimental stuff. Just a thought from someone who also has a wife that gives me the "are you okay" look on the regular.

Right, because nothing says "morning zen" like dropping 30 bucks on beans that need a PhD in thermodynamics to taste like anything other than sour battery acid. My wife just gives me the slow blink now, like I'm a malfunctioning Roomba she's debating on returning. I swear half those experimental lots are just coffee snob bait, a fun story to tell your pals while you're all pretending the blueberry notes aren't just a happy accident. Save the headache and grab the boring stuff, your pour over routine and your marriage will thank you.
