The puddle thing is wild because it's not just wind speed, it's reading the texture of the whole day. Old timers look at how fast the ripples bounce back off the curb, whether they stack up on one side, if the surface goes glassy before a shift. An anemometer gives you a number, but it can't tell you the gust is about to swing 40 degrees in ten seconds. I've watched guys call a blowdown before the needle even moved, just off the way rain dimpled a ditch. That kind of thing only lives in someone's head until they hand it off, and when they're gone it's just gone.

That was my main concern too. They told me I could use any ASE certified facility, which made the decision easier for me.

The bone saving thing is a game changer, I keep a bag in the freezer and once it's full I just dump it in the crockpot with some onion scraps and let it go all day. For leftovers I shred whatever is left and mix it with mayo and celery for chicken salad, or throw it in quesadillas when I'm too tired to cook. If the kids are getting sick of it I freeze the shredded stuff flat in bags so it doesn't go bad before I use it.
