My local shop switched to a new grinder and the coffee got worse

For the last six months, my go-to cafe in Portland used a Mazzer grinder and their espresso was perfect. Last week, they swapped it out for a shiny new model that cost over two grand. The shots are now super bitter and the crema looks thin. I asked the barista and he said the new one is 'more consistent,' but my taste buds say the opposite. Has anyone else seen a big change like this after a shop got new gear?

Ask them if they dialed in the new grinder with fresh beans right away. A new machine needs a full setup, not just plug and play. They might have just swapped it and kept the old settings, which never works. The burrs could also need a break-in period to settle down.

Maybe they just need time to get used to the new gear... could be a training thing.
