Man, that's a nightmare scenario. We had a similar meltdown last summer when our AC died during a heatwave. First thing we did was call every local restaurant we're cool with to beg for fridge space, like @green.mason had to do with portables. Then we shifted the whole menu to items that didn't need chilling, think room-temp charcuterie boards and grilled veggie platters. It was pure chaos but we got through service. What was your biggest menu change you had to make?

Seriously? Sounds like a huge waste of time and money. All that old stuff is a fire hazard, you should have just ripped it all out and put in a modern system.
