Just realized I was overproofing my sourdough for months

I kept getting flat loaves with no oven spring, and I thought my starter was weak. Then I watched a baker at a shop in Portland time her bulk ferment by feel instead of the clock, and it clicked that I was letting mine go way too long. Has anyone else had to unlearn the "double in size" rule for proofing?

Vent: The day I realized I was ruining my brisket by not resting it long enough

I always thought resting a brisket for 20 minutes was fine. Last Sunday I pulled one off my offset smoker at 203 degrees and wrapped it in foil. My buddy who competes in KCBS saw me start slicing after 25 minutes and stopped me. He made me leave it in a cooler for 2 full hours and the juice that came out when I finally cut it blew my mind. Has anyone else had a moment like this where a simple fix changed their whole cook?

Hot take: I used to hate slow burn shows but one scene in Dark did the trick.

Three months ago I was ready to quit Dark after episode 2, but that moment in the cave when the timelines clicked made me binge the whole series in a weekend, anyone else have a show they almost dropped but ended up loving?

Wasted $400 on a cheap paint gun and it cost me way more in rework

Bought a no-name HVLP gun off Amazon last year to save some cash, and that thing sprayed like a garden hose. Ended up with orange peel on a customer's Honda Civic that I had to sand down and respray completely. Total rework cost me about $700 in materials and 6 extra hours of labor. Anyone else learn the hard way that cheap tools just bite you in the wallet?

Debate: Should you optimize your Figma file for speed or readability first?

I was at a meetup in Austin last Tuesday and heard a senior designer say she always collapses every component instance to keep her files fast, but her junior dev said it makes the layers impossible to navigate. So which side is right? Do you prioritize a snappy performance by hiding everything or keep things expanded so your team can actually find stuff? I lean toward readability but my file kept crashing with 50+ artboards open.

Saw a fence crew using string lines on a slope in Austin and it made me rethink my whole approach

I was driving through Austin last weekend and stopped to watch a crew working a big hill near Lake Travis. They had string lines stretched up and down that slope like 50 feet long and they kept checking them with a level every few posts. I usually just eyeball it on hills and hope for the best but these guys had it dialed in perfect. The foreman told me he spends 20 extra minutes per run on string lines and saves hours fixing wobbly rails later. Made me realize I've been cutting corners on layout just to save a little time. Has anyone else switched to using string lines on sloped ground and seen a big difference in final quality?

Had a spoke snap on a delivery run yesterday, total pain

I was hauling a heavy load of groceries downtown when I heard that sickening 'ping' from the rear wheel. Got it home and the rim was totally out of true, had to replace the spoke and retension the whole wheel. Has anyone tried one of those cheap spoke tension meters, or is it better to just go by feel?

Finally broke down and bought a $700 smoke machine for finding intake leaks.

I was tired of guessing with soapy water on a 6.7 Powerstroke that kept throwing codes. The machine found three small leaks in under ten minutes, including one at the intercooler pipe I never would have spotted. Anyone have a good source for the fluid that doesn't cost an arm and a leg?

Just read that a single mature oak tree can host over 500 different insect species

I found this in an old forestry book at the library in my town. It was talking about how many bugs rely on just one type of tree for food and shelter. I always thought the number was high, but not that high (it kind of blew my mind). Has anyone else come across stats that made you rethink how important a single tree can be?

My tablet pen just gave up halfway through a big commission

It happened yesterday while I was working on a detailed background for a client piece. The pen for my Huion Kamvas 13 just stopped registering pressure, so all my lines were the same thickness. I had to quickly switch to my old mouse to finish the blocking in, which was a huge pain. Has anyone else had a Huion pen fail like that, and what did you do to fix it?
