Yeah, playing briny roulette is a perfect way to put it. When you say you've had batches turn out way too salty, was that with a specific type of food, like soups or meats? I wonder if some things hide the salt taste until it's way too late.

Heard a story from a buddy who does low voltage work. He was fishing a new line in an old office building and pulled out this thick, cloth-wrapped cable. Turns out it was original to the building, like 1950s stuff, for some ancient intercom system. It crumbled in his hands when he touched it. He said it felt like pulling a fossil out of the wall.

Man, I was about to buy one of those last month. Always figured the expensive gear was the safe bet, you know? But my buddy, who cooks for a living, sat me down with a cheap little stone and showed me the basics. Took some practice, but my old knife cuts better now than it ever did.
