Wait, didn't you just get the leaves from the carrot tops, not an actual new carrot? The point is getting the free greens, not regrowing the root. Those bitter leaves are meant for flavoring stocks, not salads. It's a zero effort thing if you already have a pot and some dirt.

Right? That slate blue is such a winner. I saw a house with it on the front door and window frames, and it just popped against the brick. Forty dollars for a painted cactus is just wrong. They went to the trouble of taking fancy photos to trick people. It's one thing to sell a normal plant, but to paint it and call it rare is a straight up scam. Real colored succulents exist, but they get their hues from sun stress or special breeding, not craft paint. That seller should be ashamed of themselves.
